Carpaccio recipes Carpaccio is a dish of thinly sliced raw beef and is usually drizzled with olive oil and lemon to be enjoyed as a starter. This dish was named after the Italian painter Vittore Carpaccio by the owner of Harry's Bar in Venice, as the colours of the dish was said to resemble the colours found in his paintings.
