Place the butter in a bowl over a pan of simmering water. Leave to melt, allowing the fat to rise to the surface and the milk solids to settle at the bottom. Once melted and separated, remove the bowl from the heat and allow the two layers to settle. Pour the fat into one container and the milk solids into another. The fat can now be used for cooking and will withstand a much higher temperature than normal butter.
