Quantity for 6 person(s)
  • Supreme(s) of chicken breast : 6 whole
  • Onion(s) : 1 whole
  • Fresh ginger : 40 g
  • Plain flour : 50 g
  • Egg white(s) : 2 whole
  • For the sauce
  • Soy sauce : 20 cl
  • Sake : 10 cl
  • Brown sugar : 10 g
  • Corn starch : 5 g
  • Olive oil : 5 cl

Recipe method

Preheat the oven to 180°C.
Soak wooden skewers in cold water.
Cut the chicken breasts into cubes. Peel the onion and the ginger and cut into pieces. Place the chicken, onion and ginger in a food processor and blitz to a paste. Add the egg whites to the mixture and mix well. Roll the mixture into small balls and roll them through the flour.
Heat a frying pan to hot and add a drizzle of oil. Add the yakitori balls to the pan and seal. Remove from the pan and place on a baking sheet.

Place the ingredients for the sauce in a saucepan and reduce to a syrup. Brush the syrup on to the yakitori balls and then place in the oven and cook for 5 minutes.
Brush again with the soy sauce and sake sauce and then place the yakitori balls on the wooden skewers.

Serve hot.

Add a red chilli to the chicken, ginger and onion mixture to give a little heat to the chicken yakitori.
