Place the butter, flour and a pinch of salt in a bowl. Rub the ingredients together using your fingertips. Add the sugar, cinnamon and the egg. Pour in the milk and mix until you have a malleable dough then place in the fridge and chill for 1 hour.
Preheat the oven to 180°C.
Spread the dough out to a 5mm thickness then use a pastry cutter to make individual biscuits and place on a baking tray. Transfer to the oven and bake for around 8 minutes.
Allow to cool before serving with coffee.

Try making these with different flavours - add lemon zest, salted butter, aniseed...
