A basic cake mixture made from flour, eggs, sugar and often baking powder. In America sponge cakes are more commonly known as pound cakes owing to the amounts of ingredients which are used, and in the UK they are often called Victoria sponge cakes, named after Queen Victoria who enjoyed eating sponge cake with her afternoon tea.
