  • The pin bones are found along the centre of the fillet. Using a long, thin knife, make an incision along one side of the line of bones, taking care not to cure through the skin. Make a second incision along the other side and then rotate the knife to cut away the bones (you will hear a click as you cut through them). Pull the strip away and then use the tip of your finger to check that all bones have been removed.
