  • Place the egg yolks, marsala and sugar in a bowl over a pan of simmering water. Whisk vigorously and the mixture will thicken as air is incorporated and the egg yolks cook. Once the mixture is thick and glossy, your sabayon is ready to serve. Pour on top of fresh summer berries and caramelise the top.
