How to make a roux : les techniques des chefs

  • A roux is a mixture of flour and butter which forms the base of a bechamel sauce or can be used to thicken a sauce. Melt the butter over a medium heat and then start whisking in the butter. Cook over a medium heat but do not allow the mixture to colour - you want to keep the roux a nice pale colour.
