Spread one layer of leek on to your work surface and then place a clove of garlic, some thyme, rosemary and a bay leaf in the centre. Wrap the leek around the herbs and the garlic and secure tightly with a piece of string. Your bouquet garni is now ready to use in a stock, soup or sauce.
