How to remove a scallop from its shell
Scallops have a round base and a flat top. Insert the knife on the right hand side and twist to cut through the muscle. Scrape the knife along the top of the flat shell and then open the scallop shell. With your thumb holding the scallop in place, pull the roe and the black sack away so that you are left with a clean white scallop. Use a spoon to scrape the scallop from the shell, rinse if neccessary and it is ready to cook.
