  • Break off the artichoke stem and then start pulling off leaves. Once the shape of the artichoke heart is revealed, cut off the inner leaves and then use a paring knife to remove all of the green skin. To prevent the artichoke from discolouring, rub it with fresh lemon or place in a bowl of cold water with lemon juice.
