How to prepare a mango
Mangoes have an oval shaped stone in the centre. Locate the stone and then cut either side of it using a sharp knife. Remove any remaining skin and cut the rest of the flesh from the stone. Take the two mango halves and make diagonal incisions through the fruit without cutting the skin. Once you have scored a diamond pattern on the fruit, turn each half inside out and the cubes of mango can be cut away from the skin.
