Pinchos Morunos Recipe

Pinchos Morunos - skewers of marinated pork tenderloin perfect for BBQs!

  • Pork tenderloin(s) : 750 g
  • Smoked paprika : 10 g
  • Olive oil : 50 ml
  • Fine salt : 6 pinch(es)
  • Coarse ground black pepper : 6 g
  • Ground cumin : 10 g
  • Ground coriander : 10 g
  • Dried oregano : 5 g
  • Flat leaf parsley : 0.25 bunch
  • Lemon(s) : 1 whole
  • ETAPE 1

    Pre-heat the oven to 180 celsius.

  • ETAPE 2

    Cut the pork into cubes about 1.5 cm in size. Marinate the pork cubes with the spices, olive oil, salt and pepper for a few hours before cooking.

  • ETAPE 3

    Pick the leaves from the parsley and finely chop.

  • ETAPE 4

    Put the marinated cubes of meat onto skewers and fry in a hot frying pan, making sure to sear each side until golden brown. Finish cooking in the oven for 10 minutes or until the meat is no longer pink in the middle.

  • ETAPE 5

    Serve with a sprinkle of parsley and a squeeze of lemon juice.
