Creamy rice pudding with tropical fruit salad Recipe

A traditional dessert with fruity twist: creamy rice pudding made with vanilla and served with salad of pineapple, kiwi, passion fruit and orange.

  • Round grain rice : 150 g
  • Vanilla pod(s) : 1 whole
  • Semi-skimmed milk : 500 ml
  • Double cream : 250 ml
  • Icing sugar : 80 g
  • For the garnish(es)
  • Pineapple : 0.25 whole
  • Orange(s) : 1 whole
  • Passion fruit(s) : 3 whole
  • Kiwi(s) : 2 whole
  • Caster sugar : 30 g
  • Dark rum : 10 ml


  • ETAPE 1

    To make the rice pudding: place the milk and cream in a saucepan. Add the rice, the icing sugar and the split vanilla pod. Bring to the boil and then simmer for 20-25 minutes until all the liquid has been absorbed.

  • ETAPE 2

    For the fruit salad: peel the pineapple, remove the core and cut into thin slices. Cut the passion fruits in half and scrape out the seeds. Peel the kiwis, cut into quarters and then thin slices. Zest and juice the orange. Place the fruit in a bowl and add the orange zest, juice and a splash of rum.

    Serve the tropical fruit salad on top of the rice pudding.
