Lemongrass beef skewers Recipe

Beef marinated with sesame oil, lemongrass, soy sauce and coriander served with a chili, cucumber and rice wine vinegar.

  • Beef fillet : 500 g
  • Stick(s) of lemongrass : 4 whole
  • Garlic clove(s) : 2 whole
  • Soy sauce : 3 ml
  • Sesame oil : 3 ml
  • Chinese 5 spices : 8 g
  • Honey : 30 g
  • Fresh coriander : 1 bunch
  • Sunflower oil : 1.5 ml
  • For the sauce
  • Rice wine vinegar : 15 ml
  • Caster sugar : 90 g
  • Fine salt : 1 pinch(es)
  • Cucumber(s) : 1 whole
  • Shallot(s) : 2 whole
  • Red chilli(s) : 1 whole
  • Garlic clove(s) : 1 whole
  • Peanut(s) : 45 g
  • Miso : 15 g
Method
  • ETAPE 1

    Serves 20.

    For the sauce: peel and de-seed the cucumber then cut into small dice. Peel the shallots and finely slice. Finely slice the red chilli. Place the vinegar, sugar and salt in a saucepan. Heat, stirring until the sugar is dissolved. Boil for 7 minutes until you have a thin syrup. Once cool, add the cucumber, shallots, garlic, chili and coriander. Mix throughly.

  • ETAPE 3

    Cut the beef fillet into 2cm cubes. Finely chop the lemongrass. Chop the coriander. Peel and finely chop the garlic. Combine the lemongrass, garlic, peanut sesame oil, 5 spice, honey, miso and coriander in a bowl. Add the beef cubes to the bowl and marinate overnight.

    Place the beef on skewers and then griddle. Serve with the sauce.
