Peel the mango and remove the stone. Cut the flesh into chunks add place in a food processor. Blitz with the zest and juice of the lime.
Whisk the orange blossom water with the cream to stiff peaks. Whisk the egg whites and sugar together until stiff. Mix the mango puree into the cream mixture, then use a metal spoon to gently fold in the egg white mixture into the orange blossom cream.
Spoon into glasses and chill. Before serving, spoon the pulp of the passion fruit over each dessert.
