To prepare the marinade: wash and pick the fresh coriander. Peel the shallots and the garlic cloves. Remove the skin from the fresh ginger.
Place all of the marinade ingredients in a blender and blitz to a fine paste. Place the marinade in a bowl, add the chicken, mix well and allow to marinate for at least 2 hours. Skewer the chicken and then cook on a griddle.
For the sambal: blanch the tomatoes in hot water, remove the skin. Cut in half and remove the seeds then finely dice the flesh. Peel the red onion and finely chop. Cut the green chili in half, remove the seeds and finely slice.
Mix all the sambal ingredients together and season well. Serve with the chicken skewers.
