Grilled oysters with a home made coriander, parsley and shallot butter.
Preheat your oven using the grill setting.
Shuck the oysters and pour out the liquid. Wash and pick the parsley and coriander leaves then chop roughly. Peel and finely dice the shallot.
Place the softened butter in a bowl with the chopped herbs and shallots. Beat together and then season with salt and pepper. Mix well.
Lay the oysters on a baking tray lined with a bed of rock salt. Place a small spoonful of herb butter on top of each oyster and place under the grill. Cook for about 3 minutes then serve immediately.
