Chopped strawberries, mango, kiwi, apple and pineapple served in a syrup infused with star anise, ginger and vanilla.
Split the vanilla pod in half and scrape out the seeds using the back of a knife. Peel the fresh ginger and chop into small pieces.
Place the water, sugar, vanilla seeds and pod, star anise and the chopped ginger in a saucepan and bring to the boil.
Once thick and syrupy, strain the liquid and allow to cool.
Wash all of the fruit. Hull the strawberries and peel the rest of the fruit before cutting into small pieces.
Place all of the fruit in a bowl and then drizzle over the syrup.
