Orange and passion fruit financier Recipe

Delicious French pastries made with ground almonds, orange zest and passion fruit.

Ingredients ( for people)
  • Unsalted butter : 150 g
  • Plain flour : 50 g
  • Icing sugar : 175 g
  • Ground almonds : 85 g
  • Orange(s) : 1 whole
  • Passion fruit(s) : 2 whole
  • Egg white(s) : 150 g

  • 1Preheat the oven to 180'C.
  • 2Zest the orange. Cut the passion fruits in half and scrape out the seeds and the juice.
  • 3Whisk together the egg whites, sugar, flour and ground almonds.
  • 4Melt the butter and keep on the heat until it turns a dark brown colour - beurre noisette.
  • 5Stir the beurre noisette into the almond mixture and then add the orange zest and passion fruit.
  • 6Spoon the batter into flexible silicone moulds and bake for 10-12 minutes until firm and golden brown.
  • 7Dust with icing sugar and they are ready to serve.

« Prepare this mixture in advance and then bake at the last minute. »
