A deliciously fruity dessert dish made with fresh apricots and ground almonds.
Preheat the oven to 180'C.
Place the ground almonds, flour and the sugar into a bowl and make a well in the centre.
Break the eggs into the well and gradually mix into the dry ingredients. Whisk thoroughly to ensure that you have a smooth mixture. Add the cream to the mixture and mix well. Butter and flour a baking dish.
Wash and halve the apricots and remove the stones. Place the apricot halves in the base of the dish. Pour the clafourtis batter over the fruits and bake for 30/35 minutes.
Allow to cool and then serve dusted with icing sugar and a drizzle of fresh cream.
«If you cannot get hold of fresh apricots feel free to use a tin of preserved apricots - just drain them well before placing in the baking dish.»
