Perfectly cooked asparagus wrapped in goat's cheese, cured ham and brick pastry - a delicious and impressive starter.
Preheat the oven to 220 degrees celius.
Wash and cut the ends off the asparagus.
Bring a pan of salted water to the boil. When boiling, add the asparagus.
Cook for 3-4mins then cool immediately in cold water - this will stop the cooking process and prevent them from losing their colour.
Whisk the cream and the goat's cheese together.
Spread some of this mixture on to the slices of ham.
Place an asparagus at one end of each slice of ham and roll the ham up.
Place the ham and asparagus roll on a sheet of brick pastry and roll up again.
Place the chives in the microwave for 30 seconds in the microwave - this will soften them. Once softened, use them to tie each end of the pastry sheet securely.
Sprinkle some oilve oil over the long parcels andcook in the oven for 3 minutes.
