Preheat the oven to 200°C.
Beat the eggs and the sugar together until pale and fluffy. Melt the butter until it turns a nutty brown colour.
Add the flour, a little at a time to the eggs and fold in gently. Add the honey and the melted butter. Place the mixture in a piping bag and then pipe into your mini-madeleine moulds. Place in the oven and bake for 6 to 7 minutes until firm and golden brown.
