Wash the chives and the chervil. Snip the chives and roughly chop the chervil. Zest the lemon. Wash the apples, cut in half and remove the core and then cut the flesh into thin strips, leaving the skin on. Place in a bowl of iced water and set aside.
Remove the skin and any bones from the cod and then cut the meat into large cubes.
Make the pancake batter by mixing together the flour, egg and melted butter. Add the milk a little at a time, mixing all the time.
Place the cod in a food processor and add the lemon zest, chives and the chervil and blitz. Mix the cod into the pancake batter and then season with salt and pepper.
Heat a frying pan and add a little olive oil. Place individual serving rings in the pan and the pour the pancake batter into the rings. Cook until golden brown and then turn the pancakes over and cook on the other side. Each side should need approximately 4 minutes.
Serve the pancakes topped with the fresh apple batons.
