Pesto and mozzarella rolls with smoked duck breast Recipe

Ingredients
Pour people
  • Pine kernel(s) : 50 g
  • Basil : 12 leaf
  • Garlic clove(s) : 2 whole
  • Parmesan : 30 g
  • Olive oil : 200 ml
  • Slice(s) of white bread : 6 whole
  • Smoked duck breast slice(s) : 18 whole
  • Mozzarella : 1 whole
  • Coarse salt : 1 g
Method
  • ETAPE 1

    For the pesto: place the basil leaves, parmesan, garlic and olive oil in a blender and blitz until you have a pesto paste. Season with salt and pepper.

  • ETAPE 2

    Remove the crust from the bread and use a rolling pin to flatten the bread.

  • ETAPE 3

    Thinly slice the mozzarella.

  • ETAPE 4

    Spread a layer of pesto on to each slice of bread. Add 3 slices of smoked duck breast and 2 slices of mozzarella.

  • ETAPE 5

    Roll the bread up tightly and secure with a cocktail stick.

  • ETAPE 6

    Serve with some fresh salad leaves and extra pine nuts.

Chef's tip

«If preparing these rolls in advance, wrap them tightly in cling film instead of using a cocktail stick to secure.»
