For the pesto: place the basil leaves, parmesan, garlic and olive oil in a blender and blitz until you have a pesto paste. Season with salt and pepper.
Remove the crust from the bread and use a rolling pin to flatten the bread.
Thinly slice the mozzarella.
Spread a layer of pesto on to each slice of bread. Add 3 slices of smoked duck breast and 2 slices of mozzarella.
Roll the bread up tightly and secure with a cocktail stick.
Serve with some fresh salad leaves and extra pine nuts.
