Cut the chicken breasts into cubes.
Peel and thinly slice the mushrooms. Thinly slice the spring onion and the mange tout. Julienne the courgette. Pick and finely chop the coriander.
Heat a pan and add a little olive oil. Sear the chicken pieces over a high heat for 3 minutes then turn over and season with salt and pepper. Cook for a further 3 minutes then remove from the pan. Sprinkle with sesame seeds and chopped coriander.
Add the spring onions and the mange tout to the same pan. Season, add half a glass of water and cook for 3 minutes. Add the mushrooms and the courgettes. Season again and add another half glass of water. Cook for a further 3 minutes then add the soya bean sprouts. Add the soy sauce and finally the chicken. Cover and cook for a final 2 minutes over a high heat. Check the seasoning and then serve.
