Wash the strawberries and the mint leaves. Cut the strawberries in half and remove the stalks. Set aside a handful of mint leaves to use as a garnish.
Place the strawberries, 10 mint leaves and the rest of the ingredients in a food processor and blend until smooth.
Serve in tall glasses and finish with a fresh mint leaf.
