Sliced duck, beef and chicken cooked on the hot plate and served with sauteed potatoes with spring onions and oyster mushrooms.
Place the potatoes in a pan of cold salted water. Bring to the boil and cook for 12 minutes. Drain and then cut the potatoes in half.
Thinly slice the spring onions and shred the oyster mushrooms.
Heat a frying pan and add 20g butter. Add the spring onions and the mushrooms to the pan and cook for 5 to 6 minutes. Once cooked, remove the onions and mushrooms from the pan and add the potatoes. Add the rest of the butter and cook for 20 minutes. Return the onions and mushrooms to the pan and season with salt and pepper.
For the meat: cut the duck, chicken and beef into thin slices. Cook in a hot pan or on a hot plate. Once cooked, season with fleur de sel and freshly ground black pepper.
