Penne pasta with feta, cherry tomatoes and olives Recipe

A very simple pasta dish made with feta, cherry tomatoes, courgettes, olives and rocket.

Ingredients
Pour people
  • Penne : 400 g
  • Pitted green olive(s) : 30 g
  • Cherry tomato(es) : 300 g
  • Courgette(s) : 2 whole
  • Feta : 125 g
  • Basil : 0.5 bunch
  • Rocket : 100 g
  • Fine salt : 6 pinch(es)
  • Freshly ground black pepper : 6 Turn
  • Coarse salt : 40 g
  • Olive oil : 100 ml
Method
  • ETAPE 1

    Bring a large pan of salted water to the boil. Add the penne and cook for the penne for 1 minute less than the packet recommends.

  • ETAPE 2

    Wash the vegetables. Cut the courgettes in half lengthways and then cut into slices. Remove the stems from the cherry tomatoes and then cut in half. Cut the pitted olives in half.

  • ETAPE 3

    Fry the courgettes in a hot pan with a dash of olive oil. Season, cook for 2 minutes and then add the tomatoes, pasta and olives. Cook for a further minute until the pasta is hot and cooked through. Finish with feta cheese and rocket and a drizzle of olive oil.
