Jerk seasoning Recipe

A quick and easy recipe for Jamaican jerk seasoning. Perfect rubbed on to pork, chicken and salmon before a barbecue!

  • Red chilli(s) : 1 whole
  • Red onion(s) : 1 whole
  • Fresh coriander : 1 bunch
  • Garlic clove(s) : 2 whole
  • Fresh ginger : 50 g
  • Maldon salt : 10 pinch(es)
  • Grated nutmeg : 1 g
  • Ground cinnamon : 5 g
  • Lime(s) : 1 whole
  • Dark soft brown sugar : 50 g
  • Allspice : 10 g
  • ETAPE 1

    Peel and dice the red onion and the garlic. Juice the lime. Place in a food processor with all of the other ingredients. Blitz to a paste and then rub on to chicken, pork or salmon. Leave to marinate and then cook as desired!

Chef's tip

«Rub this seasoning mix on to meat and leave to marinate overnight. This will allow the flavours to develop and the meat to tenderise.»
