Roast rib of beef Recipe

Ingredients for people

    For the meat
  • Rib of beef : 2 kg
  • Maldon salt : 15 g
  • Rapeseed oil : 50 ml
  • Head(s) of celery : 1 whole
  • Freshly ground black pepper : 10 g

    Preheat the oven to 220'C. Rub the salt and pepper all over the meat. Place a baking tray onto direct heat and allow to get hot. Add the rib of beef to the tray and sear on all sides.

    Lay the celery in the bottom of the baking tray and then place the beef on top. Transfer to the oven and cook for 15 minutes. Reduce the heat to 190'C and cook the beef for a further 45 minutes. Remove from the oven and leave to rest for a good half hour before carving and serving with your favourite roasted vegetables and sides.
