Chicken marinaded in coriander, lemongrass, chilli, lime, ginger and garlic. A great way to hone your knife skills!
Prepare the chicken by removing the skin and scoring the meat. Finely dice and slice all of the fresh ingredients and mix with the ground coriander, lime zest, fish sauce and peanut oil. Leave to marinate for at least three hours before cooking.
Cook the chicken in a griddle pan and transfer to the oven for 10 minutes or until cooked through.
