Cut the steaks into small pieces and then use a food processor to blitz them to a mince. Peel and dice the shallot and the garlic. Pick the thyme leaves from their stalks.

Heat a frying pan and add the shallot, garlic and thyme. Sweat until soft and then combine with the mince. Season with salt and pepper and work together to bind the mixture. Shape the meat into burgers and then cook in a hot pan or on a BBQ.

Peel the red onions and cut into round slices. Cut the tomatoes into slices. Slice the pickled gherkins. Toast the burger buns.

Place a beef burger on the bottom half of the burger bun. Add a little ketchup, red onion and sliced tomatoes. Finish with gherkin and then close with the top of the burger bun. Serve while hot with the accompaniment of your choice.

Chef's tip

«Try adding herbs and spices to your burger mixture to vary the flavour. Add a slice of cheese when assembling too.»
