Chilli and coriander vinaigrette Recipe

A fresh coriander and red chilli vinaigrette that is perfect with salads or grilled fish.

Ingredients
Pour people
  • Olive oil : 120 ml
  • Lime(s) : 1 whole
  • Red chilli(s) : 1 g
  • Maille Dijon mustard : 10 g
  • Fresh coriander : 0.25 bunch
  • Maldon salt : 2 pinch(es)
Method
  • ETAPE 1

    Pick and chop the coriander leaves. De-seed the chillis and then finely dice. Juice the lime.

  • ETAPE 2

    Combine the lime juice, chilli, mustard, coriander and salt. Slowly add in the olive oil and whisk to make your vinaigrette.

«Vary the amount of chilli and corinder according to taste. Try adding garlic to the vinaigrette too.»
