Sweet and sour pork Recipe

Ingredients for people


    Part one of the recipe
  • Pork loin(s) : 1000 g
  • Groundnut oil : 20 ml
  • Soy sauce : 20 ml
  • Sherry : 20 ml
  • Jasmine rice : 200 g
  • Rocket : 2 bunch

  • Part two of the recipe
  • Peanut(s) : 150 g
  • Dried red chilli(s) : 1 whole
  • Maldon salt : 4 pinch(es)
  • Freshly ground black pepper : 4 Turn

  • For the sauce
  • Tinned pineapple : 250 g
  • Pineapple juice : 2500 ml
  • Lime(s) : 2 whole
Method
  • 1Part one of the recipe

    Blitz the peanuts in a blender along with 2 pinches of salt, pepper and dried chillies. Do not blend too finely though as it is important to keep some texture. Coat the pork with the dry rub, pressing it gently onto the meat so that every part is well covered.

    Heat the wok, add the groundnut oil and cook the pork on each side for around 2 minutes until golden brown. Remove from the pan and leave to rest for a few minutes in a warm place whie the sauce is finishing.

  • 2For the sauce

    Blitz the pineapple along with the pineapple and lime juice. Pass through a sieve if required. When the pork is removed from the pan keep on the heat and add this liquer to the pan. Bring to the boil, then adjust the seasoning with soy sauce and sherry.

    Carve the pork loin in half on an angle and put on the plate. Spoon the sauce on top of the meat and around the plate. Garnish with rocket.

Chef's tip

«Try using whole soya beans instead of peanuts for the pork coating. This will give a different taste and texture to the final dish.»
