Preheat the oven to 200'C.
Roll the pastry out onto to a lined baking sheet. Peel the apples, remove the core and thinly slice. Arrange the apples in an overlapping pattern on top of the pastry. Sprinkle the caster sugar over the apples and the dot the butter on top.
Place in the oven and bake for 20 minutes. The apples should be caramelised and the pastry golden brown. Cut the tart into rectangular pieces and serve warm, adding a dollop of cream or ice cream if desired.
