Savoury muffins flavoured with smoked bacon and emmental cheese - perfect for brunch!
Preheat the oven to 180'C.
Grate the emmental. Melt the butter over a low heat. Beat the eggs together and then add the milk and the melted butter.
Sift the flour and baking powder into a large bowl. Add the milk and egg mixture and combine well to form a smooth dough. Fold in the bacon cubes and the grated cheese.
Spoon the mixture into muffin moulds, transfer to the oven and bake for 20 minutes or until golden brown.
Serve warm with butter or allow to cool thoroughly and store in an airtight container.
