Vegetarian lasagne with courgette and mozzarella Recipe

    Preheat the oven to 180'C.

    Peel the carrots and cut in half lengthways. Do the same for the courgette, then cut into half centimetre thick slices. Cut the tomatoes into slices. Cut the mozzarella into dice or slices as desired.

    Pour the tomato juice into a baking dish and add a layer of lasagne sheets. Add a layer of vegetables and top with mozzarella. Season each layer with salt and pepper and repeat until all of the baking dish is full. Drizzle olive oil over the top, transfer to the oven and bake for 25 minutes.

    Preheat the grill to 220'C.
    Sprinkle grated Parmesan cheese on to the lasagne and then cook under the grill for 5 minutes.

    Let the lasagne stand for 15 minutes before serving.
