Chicken and coconut broth with soba noodles and holy basil Recipe

Ingredients for people

  • Chicken breast(s) (150g) - skinless : 6 whole
  • Carrot(s) : 1 whole
  • Red chilli(s) : 2 whole
  • Fresh ginger : 30 g
  • Red onion(s) : 1 whole
  • Daikon(s) : 100 g
  • Chinese 5 spices : 10 g
  • Unsweetened coconut milk : 600 ml
  • Soy sauce : 50 ml
  • Fish sauce : 30 ml
  • Soba noodles : 200 g
  • Groundnut oil : 30 ml
  • Lime(s) : 2 whole
  • Thai basil : 0.5 bunch

    Slice the chicken into pieces and rub with the 5 spice mixture. Finely slice all of the vegetables. Zest and juice the lime.

    Heat the oil in a wok and then add all of the ingredients prepared above.Cook for a few minutes and then add the coconut milk, soy and fish sauce and bring to a simmer. Add the soba noodles and cook for a further couple of minutes, until the noodles are cooked. Finish with the lime zest and juice and the Thai basil.
