Peel and cut the apples into large cubes. Thread onto skewers and make 12 skewers. Make a caramel with the sugar and whisk the butter in. Coat the apple skewers with the caramel.
Split the vanilla pod length wise and scrape out the seeds. Separate the eggs and whisk the yolks with the corn starch and the sugar. Bring the milk to boil with rum and vanilla seeds. When boiling allow to cool slightly and pour over the egg yolk mix. Return to the heat and cook until the custard starts to thicken while constantly stirring. Pour through a fine sieve before serving with the caramelised apple skewers.
