Halloumi and vegetable skewers with Greek style marinade Recipe

Barbecued or grilled skewers of halloumi, courgette, pepper and mushroom cooked in a Greek style marinade made with thyme, garlic, coriander seed and lemon juice.

  • Red pepper(s) : 1 whole
  • Yellow pepper(s) : 1 whole
  • Red onion(s) : 1 whole
  • Courgette(s) : 1 whole
  • Small mushroom(s) : 12 g
  • Cherry tomato(es) : 12 g
  • Olive oil : 60 ml
  • Garlic clove(s) : 1 bulb
  • Thyme sprig(s) : 1 whole
  • Coriander seeds : 3 g
  • Fine salt : 6 pinch(es)
  • Freshly ground black pepper : 6 Turn
  • Lemon juice : 30 ml
  • Halloumi cheese : 400 g


  • ETAPE 1

    Prepare the dressing: pick the thyme leaves from their stalks. Peel and the garlic. Place these ingredients with a blender along with the olive oil, salt, pepper, lemon juice and coriander. Blend untils smooth.

  • ETAPE 2

    Wash all the vegetables and cut the halloumi into 3cm cubes. Cut the peppers into 3cm pieces. Cut the courgette into 1cm thick slices. Clean the mushrooms. Peel the red onion and cut into 3cm pieces.

  • ETAPE 3

    Assemble the skewers, alternating the vegetables with cherry tomatoes and halloumi to vary the colours. Pour this marinade over the skewers and marinate for at least 15 minutes.

  • ETAPE 4

    Depending on what you are using, heat your grill or light the BBQ. Cook the skewers for about 8 minutes, turning them often to ensure they are cooked evenly on all sides. Serve immediately.
