Apricot, peach, nectarine and melon salad Recipe

Ingredients for people

  • Apricot(s) : 6 whole
  • Peach(s) : 3 g
  • Nectarine(s) : 3 whole
  • Canteloupe melon(s) : 1 whole
  • Caster sugar : 50 g
  • Water : 200 ml
  • Fresh mint : 6 leaf
Method

    Bring the sugar and water to the boil and then pour into a bowl and allow to cool.

    Wash and peel the fruit. Remove the seeds from the melon. Cut the apricots, peaches and nectarines into quarters and the melon into cubes. Put all of the fruit into a large bowl then add the cooled syrup. Place in the refrigerator for at least 30 minutes.

    Serve the fruit salad in bowls or glasses and garnish with a mint leaf.

Chef's tip

«Serve with yogurt or ice cream for a more substantial dessert. Taste the fruit before adding the syrup - you may not need it if the fruit is ripe and very sweet.»
