Preheat the oven to 220'C (gas mark 7).
Wash the tomatoes and cut into slices. Drain and slice the mozzarella.
Shell the prawns and mix with 2 tablespoons of olive oil, then season with salt and pepper.
Peel and mince the shallot, then sweat in a hot pan with a drizzle of olive oil. Add the mussels with the white wine, mix well and cover. Cook until all the mussels have opened, then remove from the pan. Allow to cool slightly and then remove the mussels from the shells.
Place the pizza dough onto a baking sheet, and prick several times with a fork. Spread the tomato sauce over the surface and top with the sliced tomatoes, prawns and mozzarella.
Bake for 10 minutes. Then add the mussels and cook for another few minutes.
When cooked add the rocket and some parmesan shavings.
