  • Peas in their pods : 1 kg
  • Fresh mint : 0.25 bunch
  • Unsalted butter : 50 g
  • Maldon salt : 4 pinch(es)
  • Fine ground white pepper : 3 g
  • Fine salt : 3 pinch(es)


  • ETAPE 1

    Place a large pan of salted water on to boil, whilst it comes to the boil shell the peas from the pods, add the peas and mint to the boiling water and cook for 3 minutes. Drain and toss in the butter, Maldon salt and pepper before serving.

Chef's tip

«You can cook bacon and lettuce in a little stock to add to the cooked peas.»
