Preheat the oven to 180'C.
In a pan melt together the butter and sugar, then stir in the flour. Once all has melted and been incorporated gradually add the cream, stirring constantly. The mixture should be smooth. Next add the fruit and nuts. Allow the mix to cool a little.
Place spoonfuls of the mix onto non stick baking sheets, flatten them down with a pallet knife and cook for around 12 minutes or until golden. Remove from the oven and place onto a wire rack to cool. Melt the chocolate, turn the florentines over and coat the back with the melted chocolate.
