Bubble and squeak Recipe

A simple side dish made with leftover vegetables and potatoes.

  • Floury potato(es) : 12 whole
  • Savoy cabbage(s) : 1 whole
  • Brussel sprout(s) : 12 whole
  • Duck fat : 30 g
  • Maldon salt : 2 pinch(es)
  • Freshly ground black pepper : 2 Turn
  • Sunflower oil : 30 ml
  • Egg yolk(s) : 1 whole
  • ETAPE 1

    Combine together in a bowl the cooked potatoes, sprouts and cabbage with the egg yolk and seasoning. Form into cakes and pan fry with the duck fat and sunflour oil till golden.
