Financiers are moist French cakes made with ground almonds. This mini version is made with pistachios and is perfect served with coffee at the end of a meal.
Preheat the oven to 190'C.
Mix together the egg whites, sugar, flour, ground almonds and pistachios using a spatula. In a pan, melt the butter and heat until it turns a deep brown colour. Mix the butter into the rest of the ingredients. Combine gently and then transfer the mixture into financier moulds. Transfer to the oven and bake for 15 to 20 minutes.
Allow to cool before remove from the moulds.
