Preheat the oven to 180°C.
Grate the cheddar cheese. Cut the smoked salmon into small dice.
Whisk together the egg and the crème fraiche. Combine the flour and the seasoning and then slowly fold the dry ingredients into the egg mixture. Add the smoked salmon and the cheese to the mixture, combine well and then spoon the mixture into individual muffin moulds.
Bake in the oven for 10 to 15 minutes.
Leave on top of a wire rack to cool before serving.
