Everyman Co-op salad with sweetcorn Recipe

Ingredients for people

  • Co-op mixed salad leaves : 100 g
  • Cucumber(s) : 0.5 whole
  • Green Giant sweetcorn (198g can) : 1 whole
  • Carrot(s) : 0.5 whole
  • Red wine vinegar : 50 ml
  • Sunflower oil : 100 ml
  • Maille Dijon mustard : 1 Tsp
  • Maldon salt : 3 pinch(es)
  • Freshly ground black pepper : 3 Turn
Method

    Peel and grate the carrot. Wash and thinly slice the cucumber. Drain the sweetcorn.

    For the dressing:
    Whisk together the vinegar and the Dijon mustard. Gradually whisk in the sunflower oil. Season with salt and pepper and adjust of necessary.

    Mix the cucumber, grated carrot, sweetcorn and salad leaves together. Dress the leaves with the vinaigrette and mix well.

    Serve in a large bowl as a side salad.

«Dress the leaves just before serving otherwise the leaves will wilt. »
