  • Mixed salad leaves : 100 g
  • Red pepper(s) : 1 whole
  • Avocado(s) : 1 whole
  • Salad crisp sweetcorn (140g) : 1 whole
  • Lime(s) : 1 whole
  • Olive oil : 40 ml
  • Maldon salt : 3 pinch(es)
  • Freshly ground black pepper : 3 Turn
Method
  • ETAPE 1

    Finely slice the red pepper.
    Zest and juice the lime.
    Cut the avocado in half, remove the stone and peel off the skin. Thinly slice the flesh. Squeeze some of the juice from the lime onto the avocado to prevent it from dis-colouring.
    Drain the sweetcorn.

  • ETAPE 2

    Make the dressing by mixing together the lime juice, zest and olive oil. Season with salt and pepper.

  • ETAPE 3

    Mix the leaves with the avocado, red pepper, sweetcorn and dressing.

  • ETAPE 4

    Serve immediately.
